In our roastery the most important instrument is the human ear. As beans tumble in the cast-iron drum, the first crack arrives as a soft, popcorn-like chorus that tells the roaster the sugars have begun to caramelise.
A Balinese medium roast is all about restraint: carrying the beans just past first crack to unlock sweetness without hiding the origin. Our roasters log every batch, but timing is still guided by sound, smell and colour.
Guests on the coffee-making tour can stand beside the drum and learn to hear the moment for themselves.
